Dry Ingredients
2 cups Rice Flour
2 tbsp Starch (Tapioca or Potato Starch)
1/2 tsp Salt
1/2 tsp Baking Soda
1 tsp Baking Powder
Wet Ingredients
3 Ripe Bananas
2 Eggs
1/4 cup Milk
1/4 cup Olive Oil
1/4 cup Honey or Agave Nectar
Combine all dry ingredients, then combine all wet ingredients. Then combine both wet and dry together by mixing. Pour mixture into greased loaf pan. Bake at 325 for 55 minutes. Insert a toothpick. If it comes out clean it's ready. Careful not to burn the bread. Check oven as needed. You will notice it browns quickly due to the honey.
I modified this healthy recipe based on the original www.pattycake.ca. I was looking into making banana bread and this recipe is awesome! The results are not dry and tastes great when served with ice cream : D 1/4 cup honey has been reduced from the original 1/3 cup since the bananas are ripe it's quite sweet already. Another ideal ingredient to throw in for added flavor would be cinnamon and nutmeg which I haven't tried yet - next time!
