Good Food + Health Challenge Update

Last week's health challenge was to be in bed by 10:45PM latest. I think that was pretty much a fail because I've had a few days that week where I either had meetings or wedding preparations. Anyway, still gotta fit that dress! I'm sure it'll fit but as always I aim higher than just a smaller dress size - I aim to be healthy. Actually I never even thought about getting smaller. I think calling someone skinny could be just as much of an offense as calling someone fat. Hey it's true..... and there was a long discussion about this sometime.

So in conclusion, I went to bed at 10:45PM for three days of the week. During those days I forced myself to not stay up an extra hour to go on facebook or hang around youtube. It was a success that I got into bed by 10:45PM but it was a struggle to fall asleep so I ended up sleeping past 1 sometimes. It must be insomnia or something.

This week I challenged myself to incorporate a new exercise into my workout. This exercise has been around forever but I've never thought of doing it at the gym - jump rope. In fact I haven't jumped rope since I was a kid. After less than five minutes of my attempt to do consecutive jumps I was already out of breath. Not to mention, I ended up whipping myself with the rope a few times across my arms and back of my legs. After two days of jump rope I became less of a novice and hence less self whipping and more jumping.


I thought I'd also update with some healthy food I've been eating and creating.
Steamed Egg with Ground Beef - It's a pretty Asian way of making eggs. You beat the beef and eggs together and then steam it over a pot of water.


Veggies - Tomato with caramelized onions and mushrooms.

Chicken Breast - Marinated with basil, ginger, garlic, and other seasoning and spices. Garnished with fresh squeezed lime juice. Chicken is good protein for your metabolism.
Satay Chicken Skewers - This was from last week's dinner when we decided to attempt satay chicken skewers. They were BBQ'ed to perfection by Stephen. Instead of peanut sauce I made almond sauce since almond butter was available and much healthier.

Zucchini and Mushroom Skewers - A healthy and delicious way to eat your veggies.

I also made a spinach and beef lasagna but I never got to take a picture of it. Maybe next time!
